Creamy chicken pasta, Kaathoon sauce

Creamy chicken pasta, Kaathoon sauce

Ingredients

  • 300 g pasta
  • 400 g chicken breast, diced
  • 3 tablespoons olive oil
  • 5 cloves garlic, chopped
  • 200 ml double cream
  • 50 g grated parmesan
  • 2 to 4 tablespoons of Kaathoon Chili Sauce (or Piment Doux for less heat)
  • ½ teaspoon black pepper
  • Salt, to adjust at the end
  • Fresh chopped parsley, to garnish

Method

  1. Cook the pasta according to the packet instructions. Drain and set aside.
  2. Heat the olive oil in a large pan over medium heat.
  3. Add the diced chicken and brown it.
  4. Stir in the chopped garlic and cook for about a minute, without burning it.
  5. Add the Kaathoon sauce and stir to coat the chicken well.
  6. Pour in the cream and fold it through gently.
  7. Add the parmesan and pepper, then simmer for a few minutes until the sauce is silky.
  8. Fold in the pasta and toss until every strand is coated.
  9. Taste, then salt only if needed — parmesan is already very salty.
  10. Scatter with fresh parsley and serve immediately.
